Look, I’ve chased brisket from Shagbark’s tiny dining room to the pop-up madness of Wells Station, and let me tell you, Knoxville’s smoke game is no joke. You’ve got your polished spots like Farmacy, where the coffee’s as serious as the meat, and then you’ve got the glorious chaos of Buddy’s, where the beans might need a life raft.

I’ve personally sweated through the Ebenezer drive just for Smoked Pickle’s jalapeño corn. It’s all here.

So grab a fork, skip the carbs, and let’s get into the good stuff below.

Small place, huge flavors
Staff checks on you
Tender meat, perfect bread
Generous shareable side portions
Worth every single penny

Look, I've eaten a lot of brisket in this town, and Shagbark is the kind of place that makes you want to keep it a secret. It's small, alright, but the flavors are positively enormous. The staff actually checks on you, which is rare. They treat you like a human, not a ticket number. The meat is so tender it practically falls apart if you look at it wrong, and that bread? Perfect. It's a humble little operation, but the sides are shareable, generous, and the whole experience is worth every single penny. I left full, happy, and slightly annoyed I have to tell you about it. No frills, just great barbecue. Go. Now.

Texas Trinity tray wins

Jalapeño corn is fire
Worth the Ebenezer hunt

I chased Smoked Pickle all the way out to Ebenezer, and honestly, I'd do it again tomorrow. The Texas Trinity tray wins, plain and simple. The staff knows their sauce game, so don't be shy. Ask them what goes on what. The loaded potato salad slaps harder than my dad did when I crashed his truck. And that jalapeño corn? Fire. Like, actual heat. It woke me up in a way coffee never could. The brisket is smoky, the crust is legit, and the whole thing feels like a reward for making the drive. Worth the hunt, folks. Worth every mile of that confusing road.

Ribs were really good
Smoked wings were great
Sauce is sweet, tasty
Mac and cheese stood out
Portions feel a bit small

Billie Rae's is a solid stop if you're not expecting perfection. The ribs were really good, I'll give them that. The smoked wings were great too, little crispy bits of joy. Their sauce is sweet, tasty, and I wanted to lick the container. The mac and cheese stood out, creamy and real, not that powdered stuff. But here's the thing. Portions feel a bit small. Almost insultingly small for the price. You leave thinking, "That was good, but I could eat another meal." It's a taste of the good stuff, just not the full symphony. If you're hungry and patient, it'll do. If you're starving, pack a snack.

Best BBQ in town since '79
Fair prices, generous portions
Staff is young, sometimes confused
Beans need draining—ask first
Worth it for the smoky flavor

Buddy's has been doing this since '79, and you can taste the history. The smoky flavor is the real deal, deep and woodsy. Fair prices, too, and they don't skimp on the portions. The staff is young and sometimes confused, like they're learning the ropes mid-shift. Don't hold it against them. But listen, the beans need draining. I learned that the hard way. My plate was a soup situation. Ask first, or you'll be fishing for chunks with your fork. The brisket itself is solid, though. It's a classic, no-nonsense joint that's been around for a reason. Just be ready to do some recon before you dig in.

Best ribs in town, hands down
All-you-can-eat deal is a steal
Staff makes the whole visit fun
Food stays consistent and fresh
Go early to beat the rush

This Buddy's location is the one. The best ribs in town, hands down. No debate. I'm calling it. And that all-you-can-eat deal? That's a steal, a genuine bargain. The staff makes the whole visit fun, cracking jokes and hustling plates. The food stays consistent and fresh, which is more than I can say for some spots that shall remain nameless. But go early. Seriously. Beat the rush, because everyone knows about this place. I walked in at noon on a Saturday and it was like a scene from a disaster movie. But once I got that first bite of brisket, all the chaos faded. It's messy, it's loud, and it's glorious. That's the point.

Highlights
Chopped brisket serves two easily
Sauces: Spicy, Original, Gold
Hillbilly Egg Rolls are unreal
Massive portions, unreal value
Ribs worth the early visit

Small Town BBQ is not small in portions. I ordered the chopped brisket and it could have fed a small army. Like, it serves two easily, maybe three if they're tiny. The sauces are a trio of options: Spicy, Original, and Gold. The Gold is weird and I love it. But the real stars? The Hillbilly Egg Rolls. Unreal. I don't know what's in them, and I don't want to know. They're crispy, gooey, and fully addictive. Massive portions, unreal value. Seriously, bring friends or a second stomach. The ribs are worth the early visit, too. They fall off the bone like they're begging to be eaten. This place is a sleeper hit, and I'm not mad about it.

Best brisket in town
Friendly folks, killer sides
Never misses, every single time
The brisket burger is unforgettable
Pop-up worth chasing down

I'm just going to say it. Wells Station has the best brisket in town. Full stop. The folks there are friendly, the kind of people who remember your name and your order. The sides are killer, too. I could eat their coleslaw forever. But the brisket? It's never missed. Not once. Every single time I've gone, it's been moist, smoky, and perfectly seasoned. And the brisket burger? Unforgettable. I still dream about it. It's a pop-up, so you have to chase them down like a fugitive. But it's worth it. Worth the hunt, worth the wait, worth every greasy napkin. If you see them around, drop everything. I'm serious.

Highlights
Cozy, fun seasonal atmosphere
Fantastic, welcoming staff
Great food and coffee
Festive holiday-themed décor

Farmacy is a different beast. They're not a straight BBQ joint, but they have their moments. It's cozy, fun, and the seasonal atmosphere changes with the holidays. The staff is fantastic and welcoming, like they actually want you there. The food is great, and they pair it with good coffee, which is a combo I didn't know I needed. Around the holidays, they go all out with the festive décor. It feels like a Hallmark movie, but with better brisket than you'd expect. If you're looking for a break from the smokehouse grind, this is a nice change of pace. It's a place you bring your mom, or a date you're trying to impress. Just don't come here expecting a greasy spoon. It's a different kinda love.

Highlights
Pork shines, sauce plays it safe
Hot sauce wakes up flavors
Great value for hard workers

This Buddy's is a bit of a mixed bag. The pork shines, no question. The pulled pork is smoky and juicy, a real winner. But the sauce plays it safe. It's fine, but boring. That's where the hot sauce comes in. It wakes up flavors you didn't know were there. Seriously, douse it. The value is great for hard workers on a budget. You get a lot of food for the money, and it fills you up. It's not fancy, it's not pretentious. It's just honest, working-class barbecue, the kind you need after a long day of doing actual things. If you want excitement, go elsewhere. If you want a solid meal that won't break the bank, this is your spot.

Great music and kind people
Dog friendly with great beer
Awesome food truck options
Chill outdoor hangout spot

SouthSide Garage isn't a brisket joint, but it's a great place to hang out. The music is solid, the people are kind, and it's dog friendly, which automatically scores points in my book. They've got great beer, the kind you can sip while your pup naps at your feet. And the food truck options are awesome. Different vendors, different vibes, all good. It's a chill outdoor hangout spot, perfect for a warm evening with friends. The brisket depends on who's parked there. So check the schedule. But even if the truck is a dud, the atmosphere carries it. It's not about the meat, it's about the moment. And the moments here are pretty great.

Highlights
Burger cooked perfectly
Service was spot on
Best coleslaw ever
Handles special requests well
Great beer and cider

Balter Beerworks knows how to do a burger. I know, I came here for a review of brisket, but the brisket is not the play. The burger was cooked perfectly, juicy and pink in the middle. The service was spot on, attentive without hovering. And the coleslaw? Best I've ever had. I'm not joking. It's creamy, tangy, and has a crunch that sings. They handle special requests well, which is rare. I asked for extra pickles and they didn't act like I was a monster. They've got great beer and cider, too. It's not a brisket destination, but it's a damn good meal. Sometimes you need a break from the smoke, and this is the place.

Highlights
Worth the drive from VA
Best meats, hands down
Smoked chops are incredible
Ribeye tender and flavorful
Tiny lot, huge payoff

Jesse's Butcher Shop is worth the drive from Virginia. That's a bold statement, but I stand by it. The meats here are the best, hands down. I've slapped my own thigh in excitement. The smoked chops are incredible, like a pork chop had a beautiful dream and woke up smoky. The ribeye is tender and flavorful, with a crust you'd fight for. The only downside is the tiny lot. It's chaos. You circle like a vulture. But the payoff is huge. You leave with a bag of meat that makes you feel like a king. It's not a restaurant, it's a butcher shop, so you have to cook it yourself. But that's half the fun. Best meat in the region, period. Just bring your patience for parking.
