I have eaten a lot of brisket this week. That is the job.

In Pigeon Forge, the smoke signals are easy to miss between the pancake houses and the go-kart tracks, but they are there. The spread runs from a family-run counter attached to a produce stand to a park concession stand that out-cooks half the standalone joints in the county.

One place even made me reconsider my stance on banana pudding. This list is not about hype.

It is about the meat.

I ordered the brisket plate and got what I expected from a place with this reputation. The meat was tender and carried a deep, smoky flavor that lingered properly. The ribs were fall-off-the-bone, which is always a good sign. I also tried the smoked wings on a separate visit. They were outstanding, with a rich bark and moist interior. Service stayed professional and friendly even when the line got long. It is not the flashiest barbecue in town, but it is reliable in the ways that matter. I left full and satisfied. This is the best barbecue I have had. I say that carefully, because I have eaten a lot of brisket. The brisket at Bustin' Butts is to die for, and I do not use that phrase lightly. It was smoky, juicy, and sliced thick enough to matter. The attached produce store adds a strange but pleasant vibe. You can buy fresh vegetables and then eat a smoked potato topped with brisket. The family running it was incredibly friendly. They treated me like a regular on the first visit. I will be back. That is not a question.

I came back to Bennett's because the first visit left me curious. The sauces here are very good, especially the vinegar-based one. The sides tasted fantastic, particularly the coleslaw and beans. Service was friendly and accommodating, even when I asked for extra pickles. The garlic biscuit was excellent, soft and buttery with just enough bite. It was not a perfect meal, but it was worth another try. I appreciate a place that shows consistency across visits. The brisket held up well against the competition. I would not call it the best, but it is solid. That is enough for me.

I did not come here for brisket. I came for the reuben, which is the best in Tennessee. But the menu caught my attention, and I asked about their smoked meats. The portions are massive for the price, which is rare in Pigeon Forge. The ingredients tasted unbelievably fresh, from the bread to the toppings. Service was fast and friendly, and they even had locally sourced kombucha. I did not order brisket this time. I will on the next trip. The quality here suggests they know what they are doing with smoke. I trust that instinct.

Pigeon Forge Deli is a different kind of place. It is a family-run counter with a casual atmosphere. The sandwiches are made to order, and they taste like it. Buddy's in Sevierville is a short drive from Pigeon Forge, and it is worth it. The value for two people is excellent, especially if you like ribs. The all-you-can-eat ribs were tender and delicious. I ordered brisket on the side. It was fine, but the ribs stole the show. Service was friendly and attentive throughout. Portions were generous, and I still had leftovers. The hot fudge cake dessert was a great ending. It is not a fancy place. It does not need to be. It is a dependable barbecue joint with a comfortable feel. I would go back.

The Smokey Q is the best barbecue I have had in seven years. That is a long time. The brisket was perfectly smoked, with a nice crust and moist interior. The scratch-made pickles and sides were a step above the usual. You can taste the effort. The homemade sauces are worth trying all of them. This place is worth a 45-minute drive, and I made it without regret. The atmosphere is genuine local and southern, not staged for tourists. The owner seemed proud of the food. He should be. I will be returning. It is that simple.
